The colouring calculation is (I'm fairly certain) applied whether the current colour is white or not, so putting all the text as white isn't going to cost processing time and will remove unnecessary re-renderings.

No, it'll use the SDL_Color you pass to it, but if you're simply passing it on to OpenGL which can work things out with glColor and co anyway, it doesn't make much sense to render anything but white. But it doesn't do a black background or anything, it's just a solid block of colour with an alpha ch...

SDL_ttf renders blended text SDL_Surfaces with an alpha channel. In fact, that's all it renders - it's just white pixels otherwise, all the definition of the characters is in the alpha channel.
